Also, I had such a good time yesterday. Even though I was so tired, and didn't really have the energy. I finished work, then I went to the grocery store and picked up my 'supplies'. We had a really nice dinner (shrimp and scallop pasta). Then it took us from 7:15-9:00 and we made cannelloni. I think making cannelloni is fun. We kind of reinvented the recipe. It was an alright recipe, but not what I wanted. Basically, it was supposed to be a meat roll. So I used ground turkey, red pepper, mushrooms, celery, parmesan, and cottage cheese, and then we covered the top with mozza and a cream sauce. I like cheese. I don't think there should be pasta without some form of cheese. Especially not baked pasta. (This recipe didn't call for any cheese, but it was wrong). We will eat it today at lunch, and I think we will love it.
